Sawan wali spicy Bhaaji !

Its been while since I last posted :) . So as the name suggest I am not using any onion or garlic, instead , I am going for curry leaves.Curry leaves (Meethi Neem) does wonders when added to any veg
curries or pulses,be it in terms of aroma or taste :) .














Serves 2


Ingredients :


1 Bottle Gourd/lauki or Ghiya  or Petha chopped

1 Potato (boiled or not depends on you) chopped

1 chili chopped

1 Brinjal/Egg-plant or Baigan chopped

1 tsp of cumin seeds (jeera)

2 small or 1 big tomato chopped

2 tsp of garam masala

1-2 tsp of pav-bhaji masala (its amount depends on how much of chili you can bear in you food)

some coriander leaves chopped

5-7 curry leaves

1 tbs of refined oil

1 tsp of cumin powder (optional )

some salt to taste

Heat some oil in pressure cooker and add chili and cumin seeds  and saute them. In goes 5-6 curry leaves. I saved 2 for my rice :).Now goes lauki and baigan and cover with lid for few seconds. Now stir and add potato and some garam masala and cumin/jeera powdee,stir and cover with lid. Add some pav-bhaji masala and chopped tomatoes and stir. Add some salt ,some coriander (save some for later) and 1 and half cup of water and cover the lid of cooker and wait for 2 whistles.Before serving add some left over coriander in curry.Have  it with paratha or roti or rice. I had with rice which I cooked with 2 curry leaves :P :)  (No I am not obsessed with curry leaves)

Khatti - Meethi Mango wali Lassi :)



 





For me its very hard to take my hands off mango, and I rarely know anyone who does not like mangoes. Bring it in any form I just love it (raw ,ripe shakes..)  :) 
So here is a drink to make your summer a bit cooler .Just few steps an its a go..


 Serves 2 

Ingredients :


1 ripe mango  chopped 

1 -2 tbs lemon zest 

Half lemon juice

2-3  tbs honey

1 and half cup of curd 

half cup ice cubes


Blend all the ingredients together.. Just save a bit of lemon zest for garnish ( if you like ) .

Instant cheesy uttapam ;)

There are very few people who don't like cheese at all (not even paneer) but there are some throw them anything with cheese they are going to love it.So here it is my instant uttapam with paneer and some Domino's leftover  cheesy dip :P










Ingredients :


1 and half cup of sooji /rawa / semolina

1 cup of curd

1 Eno sachet lemon flavor ( it gives the quick raise  and  fluffiness  to batter for which my mom use to soak sooji in curd overnight,it also gives a tint of  lemony aroma and flavor to batter hence no to baking soda )

Paneer coated in black pepper and pav bhaaji / chana masala


1 onion finely chopped

1 small tomato finely chopper

2-3 green chilies chopped

1 capsicum finely chopped

2 tsp of benarsi rai and few curry leaves if you can get

less than 1 tbs of oil if you you are using non-stick pan

salt for taste


Sooji Batter :  just fold in sooji in curd in big bowl , mix them slowly and  add the whole small pouch of Eno in it,(I keep on increasing the no.of eno sachet per person.) now add some salt to taste and vegetables (onion,tomato and capsicum). Your batter is ready


Stir fry chilies and benarsi rai as oil gets warm and in goes paneer all scattered and in the end goes sooji batter.Cover it and cook until color changes of batter.As the color changes of whole cake (batter) just flip it and cook it for few mins.without covering it with lid..

Serve it with some sambhar or as it is. I drizzled the leftover cheese dip over it before serving :) . You can grate mozzarella over it while its hot and enjoy the fountain of cheese :P  :)

One lazy lunch with easy peasy Tangy Rice !

There are many people out there who want to try spicy Thai cuisines but could not because they are extremist in being vegetarian  or vegan ( not yet in India though ). Well there is no Thai without fish sauce, oyster sauce or Red Thai  curry sauce,hence i did not claim recipe to be Thai fried rice . Its just quick and simple :)







Grab the vegetables around you. Well i did not had much but it was enough for my recipe.

1 capsicum

2-3 green beans

2-3 green chilies

2-3 spring onions  (bulbar portion cut in half and stalk just chopped irregularly)

6-8 garlic cloves cut in half or finely diced

Around 2-3 tsp of grated ginger or you can finely chop it

Soy sauce

Salt to taste

A quarter piece of lemon.

Handful of rice



Take a skillet or pan pour in water and add grated ginger , chilies, garlic and bulbar part of  spring onions ( I left stalk for the end for its freshness and crunch,but you can add stalk too along with it if you like ) , capsicum and beans ,some salt  and in  goes some lemon zest  and in the end just put lemon as it is and the stalk and cover the skillet and cook until the rice is cooked
Toss in few drops of soy sauce before serving.

There is another version to it , not very different , just stir fry onions ( finely diced or chopped ) , chilies , garlic and ginger capsicum and beans and them for few mins.in  2 tsp of vinegar and then add rest of ingredients following water and rice

Non-vegetarian can add boneless chicken along in both versions ..

I had my rice with black coffee ( with ground cinnamon )..One tip for black coffee , never ever boil coffee with water,it will go all bitter :) .
