Indo-Mandarin Pasta ;) !

Rain drips and all I can think of samosa or pakodas and vendors selling momos and noodles with some strong tea or coffee, well I can't afford to hog around spicy noodles every time weather gets  better :)

So instead of using noodles ,which is made of maida, i used Pasta (made of sooji) .

Serves : 2

Ingredients :

1 tbs of refined oil

1 big bowl of boiled pasta

Half cup of  soy granules ( just soak it in warm water )

1 Capsicum  chopped

1 spring onion chopped

4 small onion just cut in 4 pieces

 Half cup of beans

4 chilies slitted

2 tsp ajinomoto

1 tbs of vinegar

1 tsp soy sauce

some ginger minced

8-10 cloves of gloves sliced

1 tbs tomato sauce (optional)

some black salt and  pepper

some oregano seasoning  (optional)

As the oils gets hot stir in chilies and then minced ginger and spring onions.Add onions stir fry and after 5 mins. add garlic  and stir fry along. Now its beans and capsicum, stir fry  for few mins. and then soy granules. Add vinegar and  cook  vegetables and soy granules in it  for mins. and add soy sauce, some black pepper. Then finally add pasta stir fry for few mins. so soaks all flavors and then add tomato sauce and black salt.Sprinkle oregano seasoning on pasta as you serve it with one kadak adarak wali Chai or mast hot Coffee with a smile  :)

The facts chinese cuisines use capsicum , lots of onions and least oil draws me  ;)

My molten of disaster !

There is always a next time for few things.Whether  things get straight or end up in disappointment,it does not matter,if they taste good :P. I would not have dare to touch if it were a vanilla.

So I will mention the don'ts as I will proceed .

Serves 4

Ingredients :

2 cups of  self raising flour

2 cups of powdered sugar

2/3 cup of refined/olive oil

2/3 cup of cocoa powder/Dark chocolates

1 and half cup of hot water (not more than that)

2 tsp vanilla essence

1 and half tsp of baking powder and baking soda

3 tsp venigar

1 tsp of salt

3/4 warm milk / condensed milk

Sift flour, baking powder and soda ,salt  and  cocoa powder keep it aside. If you are going to use dark chocolates, use double boiler (indirect heat) to melt them.

Mix sugar and refined / olive oil in a glass bowl  or any non metallic container with wooden spoon. Now add vinegarr and whisk the mixture, and then add essence and then add milk and mix properly.

Now add your flour mixture scoop by scoop till all of it is used and keep whisking.

Few small lumps might form but do not be bothered.Just add hot water 1 n half  cup not more than that ( I added 2 n half cups to get rid of lumps).

Grease a microwave safe bowl and dust with some cocoa.Pour the mixture in it.

Microwave it uncovered  for 7 minutes at Micro HI (100%).

Do not microwave for longer time even if surface of cake doesn't feel firm..Leave it in microwave for 4-5 mins.
Take out the dish and let it cool before removing it from the dish.

What I got was a huge molten cake, you won't :)

But it doesn't matter if you have your family by your side  to enjoy it :) , because in the end nothing else matters :) .

au revoir  !

Pine-Apple and Lychee Daiquiri [minus Rum ;)] Mocktail !

This super easy recipe,is really helpful in a scorching heat and you will find it delicious if you are fan of pine apple and citrus fruits :) . Pineapple is the dominant flavor in it.

Just blend  1 cup chopped  pieces of  fresh Pine-Apple, half glass Lychee juice and few pieces of ice cubes / chilled water and its ready  :) You can add  1-2 mint leaves some sugar too. I did not add sugar because of sweetness of lychee juice.

You can make it using fresh strawberries and kick of lemon  too :) People who prefer cocktails, rum is the base of Daiquiri.

Ciao until next post :)

Mango Tango it is :)

Its my first bake ever and very first cake recipe which turned out good , beyond my expectations. I expected a disaster,it was,in terms of presentation :P. But I was still at Cloud's 9 because my kid brothers loved it and that was enough for me :)

Ingredients :

For Cake

4 eggs
1 cup powdered sugar
1 cup self raising flour
1 tsp baking powder
3/4 cup refined oil
1/2 milk
1 tsp vanilla essence

For icing :

2 cups of chopped ripe mangoes
3 tbs of powdered sugar
1 cup curd ( hang it for 30 mins.)
1 cup finely grated cottage cheese (optional)
and 1 cup of orange juice to soak the cake

Sift flour with baking powder and keep it aside. And now comes the hard part if you are not using the mixer :P . Beat eggs and sugar together till eggs turn fluffy. Add essence. Now add oil to the beaten mixture and mix well.
Gradually fold in flour  scoop by scoop  till all of it is used.Add milk to get a slightly thinner consistency.

Grease a microwave safe bowl ( use paint brush ) and dust with some flour and batter.Pour the mixture in it.

Microwave it uncovered  for 5 minutes at Micro HI (100%).Do not microwave for longer time even if surface of cake doesn't feel firm.
Grill it it for 4-6 mins. if you want to give it brown look.Leave it in microwave for 4-5 mins.
Take out the dish and let it cool before removing it from the dish.

Cut the cake in 2 halves or soak it as it is with orange juice and keep it in fridge.Keep 1 cup of mangoes aside and puree the remaining in mixer.
Remove half of puree in a bowl and add curd to it and mix well.To the left over puree add cottage cheese and churn it till the mixture is smooth.Remove the mixture in bowl and mix it well with curd and mango mixture.Add sugar to it as needed.
Spread this mixture on one half of cake and few pieces of mangoes.Spread some mixture on other half  of cake and press it on the previous one.
Cover the cake with left over mixture and mangoes. Keep it in fridge before serving it :)

You can replace mango with strawberry and skip the soaking part.. :)

Serves 2-3

Ingredients :

5-7 tomatoes ( blend them with some sprigs of coriander and a green chili)

1-2  bay leaves (depends on size)

6-7 cloves of garlic sliced in small pieces

3 onions finely chopped

1 or half  kairi ( finely chopped )

1 finely chopped capsicum (optional)

2 tbs of tomato sauce

2 tsp of sugar

some oregano seasoning

Boiled pasta

red chili flakes

some black and common salt to taste.

2 tbs of refined oil

Red sauce :

In saucepan or skillet put some oil ( just drizzle if its a nonstick ) . Add bay leaf when oil gets warm, you will get an aroma, soothing one, now its time to add garlic stir fry it just for few seconds and immediately add onions else garlic will loose its natural flavor. When onions turn translucent its time for kairi and some capsicum (optional). Cover the pan  and cook it for while. Now check your kairi it must be a bit softer by now, so its time to add tomato puree.Boil it until it gets thicken then add sugar tomato sauce and salt, cover it for it few moments and let flavors come together. Now finally add oregano seasoning and red chili flakes. Add boil pasta and cook it with sauce for 2-3 minutes so that it could the flavor of sauce sooner.

Some Indian tadka with Chicken Tandoori

Recipe of chicken tandoori is very easily available and there  is no *My version* for it . I just followed my instincts for amount of spices used and amount of time for marination. So here we go.

Serves 3-4

Ingredients :

1 kg of chicken (clean it and put in boiling water for few mins.)

Ginger-Garlic paste

2 tbs Garam Masala (acc.to your taste )

1 and half cup of curd

2 tsp of red chili powder

lemon juice (I used 1 whole lemon )

and instead of common salt I used black salt (for marination and taste both )

First of all make small incisions with knife  or prick with help of fork. Rub salt and lemon juice on chicken and keep it aside dipped lemon juice and salt for at least half an hour.
Now wash it and keep it aside. Beat curd with some water and now add ginger-garlic paste ,garam masala , red chili powder and salt into curd.
Now dip all chicken pieces in marination prepared and keep them in fridge for at least 2 hrs ( I kept for for around 5 hrs )
Keep the chicken pieces on grill rack and set your microwave at Combi (Micro + Grill ) for 9 mins. Take them out and check , if uncooked get them back in microwave again cook them for 2-3 minutes more at Combi (Micro + Grill) mode.
Take them out again grease them with refined oil with help of brush (brush assures no excess oil touches your chicken :P ) .
Get them back in oven and Grill them for 6-7 mins.(until chicken turns brown ) . Take them out flip them and again back in microwave for 6-7 mins.
Its all ready to eat, serve it with lemon and Chaat Masala.

Initialy,I was scared like hell to use microwave , but if I can manage to use it ,then anyone can :)
