Instant cheesy uttapam ;)

Ingredients :

1 and half cup of sooji /rawa / semolina

1 cup of curd

1 Eno sachet lemon flavor ( it gives the quick raise  and  fluffiness  to batter for which my mom use to soak sooji in curd overnight,it also gives a tint of  lemony aroma and flavor to batter hence no to baking soda )

Paneer coated in black pepper and pav bhaaji / chana masala

1 onion finely chopped

1 small tomato finely chopper

2-3 green chilies chopped

1 capsicum finely chopped

2 tsp of benarsi rai and few curry leaves if you can get

less than 1 tbs of oil if you you are using non-stick pan

salt for taste

Sooji Batter :  just fold in sooji in curd in big bowl , mix them slowly and  add the whole small pouch of Eno in it,(I keep on increasing the no.of eno sachet per person.) now add some salt to taste and vegetables (onion, tomato and capsicum). Your batter is ready

Stir fry chilies and benarsi rai as oil gets warm and in goes paneer all scattered and in the end goes sooji batter.Cover it and cook until color changes of batter. As the color changes of whole cake (batter) just flip it and cook it for few mins.without covering it with lid..

Serve it with some sambhar or as it is. I drizzled the leftover cheese dip over it before serving :) . You can grate mozzarella over it while its hot and enjoy the fountain of cheese :P  :)

One lazy lunch with easy peasy Tangy Rice !

There are many people out there who want to try spicy Thai cuisines but could not because they are extremist in being vegetarian  or vegan ( not yet in India though ). Well there is no Thai without fish sauce, oyster sauce or Red Thai  curry sauce, hence i did not claim recipe to be Thai fried rice . Its just quick and simple :)

Grab the vegetables around you. Well i did not had much but it was enough for my recipe.

1 capsicum

2-3 green beans

2-3 green chilies

2-3 spring onions  (bulbar portion cut in half and stalk just chopped irregularly)

6-8 garlic cloves cut in half or finely diced

Around 2-3 tsp of grated ginger or you can finely chop it

Soy sauce

Salt to taste

A quarter piece of lemon.

Handful of rice

Take a skillet or pan pour in water and add grated ginger , chilies, garlic and bulbar part of  spring onions ( I left stalk for the end for its freshness and crunch, but you can add stalk too along with it if you like ) , capsicum and beans ,some salt  and in  goes some lemon zest  and in the end just put lemon as it is and the stalk and cover the skillet and cook until the rice is cooked
Toss in few drops of soy sauce before serving.

There is another version to it , not very different , just stir fry onions ( finely diced or chopped ) , chilies , garlic and ginger capsicum and beans and them for few mins.in  2 tsp of vinegar and then add rest of ingredients following water and rice

Non-vegetarian can add boneless chicken along in both versions ..

I had my rice with black coffee ( with ground cinnamon )..One tip for black coffee , never ever boil coffee with water,it will go all bitter :) .

Stay healthy , stay happy :)

Rain drips and all I can think of samosa or pakodas and vendors selling momos and noodles with some strong tea or coffee, well I can't afford to hog around spicy noodles every time weather gets  better :)

So instead of using noodles ,which is made of maida, i used Pasta (made of sooji) .

Serves : 2

Ingredients :

1 tbs of refined oil

1 big bowl of boiled pasta

Half cup of  soy granules ( just soak it in warm water )

1 Capsicum  chopped

1 spring onion chopped

4 small onion just cut in 4 pieces

 Half cup of beans

4 chilies slitted

2 tsp ajinomoto

1 tbs of vinegar

1 tsp soy sauce

some ginger minced

8-10 cloves of gloves sliced

1 tbs tomato sauce (optional)

some black salt and  pepper

some oregano seasoning  (optional)

As the oils gets hot stir in chilies and then minced ginger and spring onions.Add onions stir fry and after 5 mins. add garlic  and stir fry along. Now its beans and capsicum, stir fry  for few mins. and then soy granules. Add vinegar and  cook  vegetables and soy granules in it  for mins. and add soy sauce, some black pepper. Then finally add pasta stir fry for few mins. so soaks all flavors and then add tomato sauce and black salt.Sprinkle oregano seasoning on pasta as you serve it with one kadak adarak wali Chai or mast hot Coffee with a smile  :)

My molten of disaster !

There is always a next time for few things.Whether  things get straight or end up in disappointment,it does not matter,if they taste good :P. I would not have dare to touch if it were a vanilla.

So I will mention the don'ts as I will proceed .

Serves 4

Ingredients :

2 cups of  self raising flour

2 cups of powdered sugar

2/3 cup of refined/olive oil

2/3 cup of cocoa powder/Dark chocolates

1 and half cup of hot water (not more than that)

2 tsp vanilla essence

1 and half tsp of baking powder and baking soda

3 tsp venigar

1 tsp of salt

3/4 warm milk / condensed milk

Sift flour, baking powder and soda ,salt  and  cocoa powder keep it aside. If you are going to use dark chocolates, use double boiler (indirect heat) to melt them.

Mix sugar and refined / olive oil in a glass bowl  or any non metallic container with wooden spoon. Now add vinegarr and whisk the mixture, and then add essence and then add milk and mix properly.

Now add your flour mixture scoop by scoop till all of it is used and keep whisking.

Few small lumps might form but do not be bothered.Just add hot water 1 n half  cup not more than that ( I added 2 n half cups to get rid of lumps).

Grease a microwave safe bowl and dust with some cocoa.Pour the mixture in it.

Microwave it uncovered  for 7 minutes at Micro HI (100%).

Do not microwave for longer time even if surface of cake doesn't feel firm..Leave it in microwave for 4-5 mins.
Take out the dish and let it cool before removing it from the dish.

What I got was a huge molten cake, you won't :)

But it doesn't matter if you have your family by your side  to enjoy it :) , because in the end nothing else matters :) .

Just blend  1 cup chopped  pieces of  fresh Pine-Apple, half glass Lychee juice and few pieces of ice cubes / chilled water and its ready  :) You can add  1-2 mint leaves some sugar too. I did not add sugar because of sweetness of lychee juice.

You can make it using fresh strawberries and kick of lemon  too :) People who prefer cocktails, rum is the base of Daiquiri.

1 kg of chicken (clean it and put in boiling water for few mins.)

Ginger-Garlic paste

2 tbs Garam Masala (acc.to your taste )

and instead of common salt I used black salt (for marination and taste both )

First of all make small incisions with knife  or prick with help of fork. Rub salt and lemon juice on chicken and keep it aside dipped lemon juice and salt for at least half an hour.
Now wash it and keep it aside. Beat curd with some water and now add ginger-garlic paste ,garam masala , red chili powder and salt into curd.
Now dip all chicken pieces in marination prepared and keep them in fridge for at least 2 hrs ( I kept for for around 5 hrs )
Keep the chicken pieces on grill rack and set your microwave at Combi (Micro + Grill ) for 9 mins. Take them out and check , if uncooked get them back in microwave again cook them for 2-3 minutes more at Combi (Micro + Grill) mode.
